Ingredients:
- 1.5 lbs chicken breast, cut into 1-inch pieces
- 1/4 cup cornstarch
- 1/2 tsp sea salt
- 1/4 tsp cracked black pepper
- 1 tsp garlic powder
- 2 tbsp neutral oil
- 4 tbsp unsalted butter, divided
- 1/3 cup raw honey
- 1 tbsp soy sauce
- 1.5 tbsp apple cider vinegar
- 3 cloves garlic, minced
Instructions:
- Pat chicken dry with paper towels and toss with 1/4 cup cornstarch, 1/2 tsp sea salt, 1/4 tsp pepper, and 1 tsp garlic powder. Note: Drying the meat is the only way to get a true crunch.
- Heat 2 tbsp neutral oil and 2 tbsp butter in a large skillet over medium high heat until the butter stops foaming.
- Add the chicken in a single layer and cook for 3-4 minutes per side until the edges are deeply golden and crisp.
- While the chicken sears, whisk together 1/3 cup raw honey, 1 tbsp soy sauce, and 1.5 tbsp apple cider vinegar.
- Reduce the heat to medium and add the remaining 2 tbsp butter and 3 cloves minced garlic to the pan. Note: Moving the chicken to the sides of the pan gives the garlic room to soften without burning.
- Pour the honey mixture over the chicken once the garlic smells fragrant.
- Toss the chicken constantly for 1-2 minutes until the sauce bubbles and thickens into a glossy coating.
- Remove from heat and let the dish sit for 2 minutes to allow the glaze to set.
