Ingredients:

  • 1.5 lbs chicken breast, cut into 1-inch pieces
  • 1/4 cup cornstarch
  • 1/2 tsp sea salt
  • 1/4 tsp cracked black pepper
  • 1 tsp garlic powder
  • 2 tbsp neutral oil
  • 4 tbsp unsalted butter, divided
  • 1/3 cup raw honey
  • 1 tbsp soy sauce
  • 1.5 tbsp apple cider vinegar
  • 3 cloves garlic, minced

Instructions:

  1. Pat chicken dry with paper towels and toss with 1/4 cup cornstarch, 1/2 tsp sea salt, 1/4 tsp pepper, and 1 tsp garlic powder. Note: Drying the meat is the only way to get a true crunch.
  2. Heat 2 tbsp neutral oil and 2 tbsp butter in a large skillet over medium high heat until the butter stops foaming.
  3. Add the chicken in a single layer and cook for 3-4 minutes per side until the edges are deeply golden and crisp.
  4. While the chicken sears, whisk together 1/3 cup raw honey, 1 tbsp soy sauce, and 1.5 tbsp apple cider vinegar.
  5. Reduce the heat to medium and add the remaining 2 tbsp butter and 3 cloves minced garlic to the pan. Note: Moving the chicken to the sides of the pan gives the garlic room to soften without burning.
  6. Pour the honey mixture over the chicken once the garlic smells fragrant.
  7. Toss the chicken constantly for 1-2 minutes until the sauce bubbles and thickens into a glossy coating.
  8. Remove from heat and let the dish sit for 2 minutes to allow the glaze to set.
