Ingredients:

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 tbsp avocado oil or melted ghee
  • 1 tsp kosher salt
  • 0.5 tsp freshly cracked black pepper
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp dried oregano
  • 1 tsp light brown sugar

Instructions:

  1. Place the chicken breasts between two sheets of plastic wrap. Use a mallet to pound them to an even 0.75 inch thickness across.
  2. Pat the chicken bone-dry with paper towels. Rub each breast thoroughly with avocado oil or melted ghee.
  3. In a small bowl, whisk the salt, pepper, smoked paprika, garlic powder, onion powder, oregano, and brown sugar. Sprinkle the mixture generously over both sides of the chicken, pressing it in so it adheres.
  4. Arrange the chicken on a parchment-lined tray, leaving at least 2 inches between each piece. Bake in a preheated oven at 400°F (200°C) for approximately 18 minutes or until the internal temperature reaches 165°F. Allow to rest for 5 minutes.
