Ingredients:

  • 1 lb fresh maitake mushrooms
  • 2 tbsp avocado oil
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp sea salt
  • 1/4 tsp cracked black pepper
  • 1 tsp balsamic glaze
  • 1 tbsp fresh chives, minced

Instructions:

  1. Gently pull the 1 lb fresh maitake mushrooms apart with your fingers into bite-sized petals or fronds.
  2. Place the shredded mushrooms into your large bowl and drizzle with the 2 tbsp avocado oil. Toss them gently but thoroughly until every crevice looks glossy and dark.
  3. In a small ramekin, mix the 1 tsp smoked paprika, 1/2 tsp garlic powder, 1/2 tsp sea salt, and 1/4 tsp black pepper. Sprinkle this mixture over the mushrooms and toss again until the white centers are stained a rusty red.
  4. Spread the mushrooms onto your parchment lined sheet pan in a single layer. Roast at 400°F for 10 to 12 minutes until the edges look dark brown and feel firm to the touch.
  5. Remove the tray from the oven and immediately drizzle the 1 tsp balsamic glaze over the hot mushrooms.
  6. Scatter the 1 tbsp fresh chives over the top while the mushrooms are still sizzling. The aroma of toasted onion should hit you immediately as the chives hit the hot oil.
