Ingredients:
- 2 cups (480 ml) heavy cream
- 1 cup (240 ml) whole milk
- 3/4 cup (150 g) granulated sugar
- 1 tablespoon (15 ml) vanilla extract
- 1/4 teaspoon (1 g) salt
- 1 1/2 cups (255 g) semi-sweet chocolate chips
- 2 tablespoons (30 ml) coconut oil
Instructions:
- In a mixing bowl, combine heavy cream, whole milk, sugar, vanilla extract, and salt. Whisk until well mixed and sugar is dissolved.
- Pour the mixture into the blender and blend for 30 seconds for a smoother texture. Chill in the refrigerator for at least 1 hour.
- Once chilled, pour the mixture into popsicle molds, leaving a small space at the top. Insert sticks and freeze for at least 4 hours or until solid.
- In a double boiler, combine chocolate chips and coconut oil. Stir until fully melted and smooth. Remove from heat.
- Remove popsicles from molds and dip each one into the melted chocolate. Place on a lined baking sheet to set, working quickly before the chocolate hardens.
- Return coated popsicles to the freezer for 30 minutes to fully set.
