Ingredients:

  • 2 cups (480 ml) heavy cream
  • 1 cup (240 ml) whole milk
  • 3/4 cup (150 g) granulated sugar
  • 1 tablespoon (15 ml) vanilla extract
  • 1/4 teaspoon (1 g) salt
  • 1 1/2 cups (255 g) semi-sweet chocolate chips
  • 2 tablespoons (30 ml) coconut oil

Instructions:

  1. In a mixing bowl, combine heavy cream, whole milk, sugar, vanilla extract, and salt. Whisk until well mixed and sugar is dissolved.
  2. Pour the mixture into the blender and blend for 30 seconds for a smoother texture. Chill in the refrigerator for at least 1 hour.
  3. Once chilled, pour the mixture into popsicle molds, leaving a small space at the top. Insert sticks and freeze for at least 4 hours or until solid.
  4. In a double boiler, combine chocolate chips and coconut oil. Stir until fully melted and smooth. Remove from heat.
  5. Remove popsicles from molds and dip each one into the melted chocolate. Place on a lined baking sheet to set, working quickly before the chocolate hardens.
  6. Return coated popsicles to the freezer for 30 minutes to fully set.
