Ingredients:

  • 1 tbsp olive oil
  • 1/2 cup yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/4 tsp smoked paprika
  • 1 can (15 oz) black beans, drained and rinsed
  • 1/2 cup salsa
  • 1/4 cup water
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 large eggs
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup feta cheese, crumbled

Instructions:

  1. Heat olive oil over medium heat. Add the diced onion and sauté until translucent (about 3 minutes).
  2. Stir in the minced garlic, cumin, chili powder, and smoked paprika. Stir constantly for 60 seconds until the spices smell nutty and fragrant.
  3. Fold in the rinsed black beans, salsa, and water. Stir to combine and let the mixture simmer uncovered for 4-6 minutes, stirring occasionally, until the liquid has reduced by half and the mixture looks thick and glossy.
  4. Reduce heat to low. Use your spatula to create four small wells in the bean mixture.
  5. Crack one egg into each well. Cover the pan with a lid for 2-3 minutes until the egg whites are opaque but the yolks are still slightly jiggly.
  6. Remove from heat and garnish with crumbled cheese and fresh cilantro.
