Ingredients:
- 1 tbsp olive oil
- 1/2 cup yellow onion, finely diced
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp chili powder
- 1/4 tsp smoked paprika
- 1 can (15 oz) black beans, drained and rinsed
- 1/2 cup salsa
- 1/4 cup water
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 large eggs
- 1/4 cup fresh cilantro, chopped
- 1/4 cup feta cheese, crumbled
Instructions:
- Heat olive oil over medium heat. Add the diced onion and sauté until translucent (about 3 minutes).
- Stir in the minced garlic, cumin, chili powder, and smoked paprika. Stir constantly for 60 seconds until the spices smell nutty and fragrant.
- Fold in the rinsed black beans, salsa, and water. Stir to combine and let the mixture simmer uncovered for 4-6 minutes, stirring occasionally, until the liquid has reduced by half and the mixture looks thick and glossy.
- Reduce heat to low. Use your spatula to create four small wells in the bean mixture.
- Crack one egg into each well. Cover the pan with a lid for 2-3 minutes until the egg whites are opaque but the yolks are still slightly jiggly.
- Remove from heat and garnish with crumbled cheese and fresh cilantro.
