Ingredients:

  • 6 cups mixed fresh greens (such as arugula, baby spinach, and romaine)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, thinly sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup crumbled feta cheese (optional)
  • 1/4 cup Kalamata olives, pitted and halved
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 tablespoon honey or agave syrup (optional)
  • Salt and freshly ground pepper, to taste

Instructions:

  1. Wash and dry the mixed greens thoroughly; tear into bite-sized pieces if necessary.
  2. Halve cherry tomatoes and slice cucumber and red onion.
  3. In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, honey (if using), salt, and pepper until well combined.
  4. In a large mixing bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, feta cheese (if using), and Kalamata olives.
  5. Drizzle the vinaigrette over the salad, tossing gently to combine and evenly coat all ingredients.
  6. Transfer the salad to a serving bowl and enjoy immediately.
