Ingredients:
- 6 cups mixed fresh greens (such as arugula, baby spinach, and romaine)
- 1 cup cherry tomatoes, halved
- 1 cucumber, thinly sliced
- 1/4 cup red onion, thinly sliced
- 1/4 cup crumbled feta cheese (optional)
- 1/4 cup Kalamata olives, pitted and halved
- 1/4 cup extra-virgin olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon Dijon mustard
- 1 tablespoon honey or agave syrup (optional)
- Salt and freshly ground pepper, to taste
Instructions:
- Wash and dry the mixed greens thoroughly; tear into bite-sized pieces if necessary.
- Halve cherry tomatoes and slice cucumber and red onion.
- In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, honey (if using), salt, and pepper until well combined.
- In a large mixing bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, feta cheese (if using), and Kalamata olives.
- Drizzle the vinaigrette over the salad, tossing gently to combine and evenly coat all ingredients.
- Transfer the salad to a serving bowl and enjoy immediately.
