Ingredients:

  • 6 oz bittersweet chocolate, chopped
  • 2 tablespoons unsalted butter
  • 2 large eggs, separated
  • 2 tablespoons granulated sugar
  • 1 cup heavy cream
  • ½ teaspoon vanilla extract
  • Pinch of salt

Instructions:

  1. Set a heatproof bowl over simmering water (double boiler) or microwave chocolate and butter until melted. Stir until smooth and let it cool slightly.
  2. In a separate bowl, whisk egg yolks and granulated sugar until creamy and pale. Add the melted chocolate mixture and whisk until combined.
  3. In a clean bowl, whip egg whites with a pinch of salt until soft peaks form.
  4. Gently fold the beaten egg whites into the chocolate mixture until incorporated.
  5. In another bowl, beat heavy cream and vanilla extract until stiff peaks form.
  6. Carefully fold the whipped cream into the chocolate mixture until smooth and no streaks remain.
  7. Spoon or pipe the mousse into serving cups and refrigerate for at least 2 hours to set.
  8. Serve chilled, optionally garnished with chocolate shavings or fresh berries.
