Ingredients:
- 6 oz bittersweet chocolate, chopped
- 2 tablespoons unsalted butter
- 2 large eggs, separated
- 2 tablespoons granulated sugar
- 1 cup heavy cream
- ½ teaspoon vanilla extract
- Pinch of salt
Instructions:
- Set a heatproof bowl over simmering water (double boiler) or microwave chocolate and butter until melted. Stir until smooth and let it cool slightly.
- In a separate bowl, whisk egg yolks and granulated sugar until creamy and pale. Add the melted chocolate mixture and whisk until combined.
- In a clean bowl, whip egg whites with a pinch of salt until soft peaks form.
- Gently fold the beaten egg whites into the chocolate mixture until incorporated.
- In another bowl, beat heavy cream and vanilla extract until stiff peaks form.
- Carefully fold the whipped cream into the chocolate mixture until smooth and no streaks remain.
- Spoon or pipe the mousse into serving cups and refrigerate for at least 2 hours to set.
- Serve chilled, optionally garnished with chocolate shavings or fresh berries.
