Ingredients:

  • 1 1/2 cups (135g) old-fashioned rolled oats
  • 1/2 cup (42g) ground flaxseed
  • 1 tablespoon (12g) chia seeds
  • 1/2 cup (128g) creamy natural peanut butter
  • 1/3 cup (113g) raw honey or pure maple syrup
  • 1 teaspoon pure vanilla extract
  • 1/2 cup (90g) mini semi-sweet chocolate chips
  • 1/3 cup (25g) unsweetened shredded coconut
  • 1 pinch sea salt

Instructions:

  1. In a large mixing bowl, combine the creamy peanut butter, honey, and vanilla extract. Stir until the mixture forms a uniform, smooth emulsion.
  2. Add the rolled oats, ground flaxseed, chia seeds, and sea salt to the wet base. Use a sturdy spatula to fold the ingredients together until no dry pockets remain.
  3. Gently fold in the mini chocolate chips and shredded coconut until evenly distributed throughout the dough.
  4. Place the bowl in the refrigerator for at least 30 minutes to allow the oats to hydrate and the mixture to firm up.
  5. Using a small cookie scoop or tablespoon, portion the mixture and roll between your palms into 1-inch spheres.
  6. Place the balls back in the fridge for 15 minutes until firm to the touch.
