Ingredients:
- 1 1/2 cups (135g) old-fashioned rolled oats
- 1/2 cup (42g) ground flaxseed
- 1 tablespoon (12g) chia seeds
- 1/2 cup (128g) creamy natural peanut butter
- 1/3 cup (113g) raw honey or pure maple syrup
- 1 teaspoon pure vanilla extract
- 1/2 cup (90g) mini semi-sweet chocolate chips
- 1/3 cup (25g) unsweetened shredded coconut
- 1 pinch sea salt
Instructions:
- In a large mixing bowl, combine the creamy peanut butter, honey, and vanilla extract. Stir until the mixture forms a uniform, smooth emulsion.
- Add the rolled oats, ground flaxseed, chia seeds, and sea salt to the wet base. Use a sturdy spatula to fold the ingredients together until no dry pockets remain.
- Gently fold in the mini chocolate chips and shredded coconut until evenly distributed throughout the dough.
- Place the bowl in the refrigerator for at least 30 minutes to allow the oats to hydrate and the mixture to firm up.
- Using a small cookie scoop or tablespoon, portion the mixture and roll between your palms into 1-inch spheres.
- Place the balls back in the fridge for 15 minutes until firm to the touch.
