Ingredients:
- 1.5 cups (180g) gluten-free gingersnap crumbs
- 5 tbsp (70g) unsalted butter, melted
- 2 tbsp (25g) brown sugar, packed
- 16 oz (450g) full-fat cream cheese, softened to room temperature
- 1 cup (245g) pumpkin puree
- 0.5 cup (100g) powdered sugar, sifted
- 1 tsp (5ml) vanilla extract
- 1 tsp (2g) ground cinnamon
- 0.5 tsp (1g) ground ginger
- 0.25 tsp (0.5g) ground cloves
- 1 cup (240ml) heavy whipping cream, cold
Instructions:
- Combine the gingersnap crumbs, melted butter, and brown sugar in a bowl until the mixture resembles wet sand.
- Firmly press the crumb mixture into the bottom of a 9-inch springform pan using the bottom of a glass to ensure a flat, dense layer.
- Place the pan in the freezer for 15 minutes to lock in the structure of the crust.
- Beat the softened cream cheese and powdered sugar together using an electric mixer until smooth and devoid of lumps.
- Fold in the pumpkin puree, vanilla extract, cinnamon, ginger, and cloves until the color is uniform.
- In a separate chilled bowl, whip the heavy whipping cream until stiff peaks form.
- Gently fold the whipped cream into the pumpkin mixture using a silicone spatula to maintain the aeration.
- Pour the filling over the chilled crust and smooth the top with a spatula.
- Cover the pan and refrigerate for a minimum of 6 hours to allow the structure to set.
