Ingredients:

  • 1/2 cup (125g) creamy peanut butter
  • 1/3 cup (110g) honey
  • 1/4 tsp (1.5g) fine sea salt
  • 2 cups (180g) rolled oats
  • 1/2 cup (85g) dark chocolate chips

Instructions:

  1. Combine the peanut butter, honey, and salt in a microwave-safe bowl.
  2. Heat for 30–60 seconds until the mixture is fluid, then stir until the texture is velvety and smooth.
  3. Fold in the rolled oats, stirring until every oat is fully coated and glistening.
  4. Fold in the dark chocolate chips or dried fruit until evenly distributed.
  5. Line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides.
  6. Pour the mixture into the pan and press down firmly with a spatula to remove air gaps.
  7. Transfer to the refrigerator and chill for at least 1 hour.
  8. Lift the set mixture by the parchment paper and slice into 12 even rectangles.
