Ingredients:
- 1 cup (90g) rolled oats (old-fashioned, not instant)
- ½ cup (120g) peanut butter (smooth or crunchy, your choice)
- ⅓ cup (80ml) honey
- 1/4 cup (30g) shredded coconut (unsweetened)
- 2 tablespoons (15g) chia seeds
- 2 tablespoons (15g) flax seeds (ground)
- ¼ cup (40g) dried cranberries or raisins, chopped
Instructions:
- In a large bowl, combine the rolled oats, shredded coconut, chia seeds, flax seeds, and chopped dried cranberries/raisins. Give it a good mix.
- Add the peanut butter and honey to the bowl.
- Stir everything together until well combined. If the mixture seems too dry, add a teaspoon of honey or peanut butter at a time until it comes together. If it's too wet, add a tablespoon more of oats.
- Cover the bowl and refrigerate for at least 30 minutes to allow the mixture to firm up. This makes them easier to roll.
- Roll the mixture into balls about 1-inch (2.5 cm) in diameter.
- Place the finished power balls on a baking sheet lined with parchment paper and chill for another 15-30 minutes to firm them up further.
- Store the power balls in an airtight container in the refrigerator for up to a week. Serve and enjoy your no bake power balls!
