Ingredients:

  • 1 cup (90g) rolled oats (old-fashioned, not instant)
  • ½ cup (120g) peanut butter (smooth or crunchy, your choice)
  • ⅓ cup (80ml) honey
  • 1/4 cup (30g) shredded coconut (unsweetened)
  • 2 tablespoons (15g) chia seeds
  • 2 tablespoons (15g) flax seeds (ground)
  • ¼ cup (40g) dried cranberries or raisins, chopped

Instructions:

  1. In a large bowl, combine the rolled oats, shredded coconut, chia seeds, flax seeds, and chopped dried cranberries/raisins. Give it a good mix.
  2. Add the peanut butter and honey to the bowl.
  3. Stir everything together until well combined. If the mixture seems too dry, add a teaspoon of honey or peanut butter at a time until it comes together. If it's too wet, add a tablespoon more of oats.
  4. Cover the bowl and refrigerate for at least 30 minutes to allow the mixture to firm up. This makes them easier to roll.
  5. Roll the mixture into balls about 1-inch (2.5 cm) in diameter.
  6. Place the finished power balls on a baking sheet lined with parchment paper and chill for another 15-30 minutes to firm them up further.
  7. Store the power balls in an airtight container in the refrigerator for up to a week. Serve and enjoy your no bake power balls!
