Ingredients:

  • 4 ripe bananas, peeled, sliced into 1-inch (2.5 cm) pieces, and frozen solid (approximately 500g / 17.6oz)
  • 1-2 tablespoons milk (dairy or non-dairy) - adjust for desired consistency (Optional)
  • 2 tablespoons peanut butter (30g / 1oz) (Optional)
  • 2 tablespoons cocoa powder (15g / 0.5oz) (Optional)
  • ½ teaspoon vanilla extract (2.5 ml) (Optional)
  • ½ cup fresh or frozen berries (75g / 2.6oz) (Optional)
  • Chocolate chips, sprinkles, nuts, etc. (for topping) (Optional)

Instructions:

  1. Peel ripe bananas, slice them into even pieces, and spread them in a single layer on a baking sheet lined with parchment paper.
  2. Freeze the banana slices for at least 2 hours, or preferably overnight, until completely frozen solid. They should be rock hard!
  3. Place the frozen banana slices into your food processor or blender.
  4. Pulse the bananas several times to break them up. Then, process continuously until the mixture turns into a smooth, creamy ice cream consistency, stopping to scrape down the sides as needed. This might take a few minutes. If mixture seems too dry, add 1 tbsp of milk.
  5. Once the banana ice cream is smooth, add any desired flavorings (peanut butter, cocoa powder, berries, etc.) and process until combined.
  6. Serve immediately for a soft-serve consistency. For a firmer ice cream, transfer to a freezer-safe container and freeze for another 30 minutes to 1 hour.
