Ingredients:
- 4 ripe bananas, peeled, sliced into 1-inch (2.5 cm) pieces, and frozen solid (approximately 500g / 17.6oz)
- 1-2 tablespoons milk (dairy or non-dairy) - adjust for desired consistency (Optional)
- 2 tablespoons peanut butter (30g / 1oz) (Optional)
- 2 tablespoons cocoa powder (15g / 0.5oz) (Optional)
- ½ teaspoon vanilla extract (2.5 ml) (Optional)
- ½ cup fresh or frozen berries (75g / 2.6oz) (Optional)
- Chocolate chips, sprinkles, nuts, etc. (for topping) (Optional)
Instructions:
- Peel ripe bananas, slice them into even pieces, and spread them in a single layer on a baking sheet lined with parchment paper.
- Freeze the banana slices for at least 2 hours, or preferably overnight, until completely frozen solid. They should be rock hard!
- Place the frozen banana slices into your food processor or blender.
- Pulse the bananas several times to break them up. Then, process continuously until the mixture turns into a smooth, creamy ice cream consistency, stopping to scrape down the sides as needed. This might take a few minutes. If mixture seems too dry, add 1 tbsp of milk.
- Once the banana ice cream is smooth, add any desired flavorings (peanut butter, cocoa powder, berries, etc.) and process until combined.
- Serve immediately for a soft-serve consistency. For a firmer ice cream, transfer to a freezer-safe container and freeze for another 30 minutes to 1 hour.
