- 1.25 cups water
- 1 large egg
- 3 tbsp neutral oil
- 1 tsp vanilla extract
Instructions:
- In a large mixing bowl, whisk together the all-purpose flour, baking powder, granulated sugar, and salt to aerate the dry base and ensure even distribution of the leavening agent.
- Create a well in the center of the dry ingredients and pour in the water, egg, oil, and vanilla extract.
- Whisk gently just until the large streaks of flour disappear, being careful not to overmix; small lumps should remain for a tender crumb.
- Heat a non-stick skillet or griddle over medium heat and lightly grease with a small amount of oil.
- Pour 1/4 cup of batter per pancake onto the hot surface. Cook until bubbles form on the surface and the edges appear matte and set.
- Flip the pancakes once and cook for an additional 1–2 minutes until the underside is golden brown and the center is fully cooked.
