Ingredients:

  • 1.5 cups all-purpose flour

  • 2 tbsp granulated sugar
  • 0.5 tsp salt
  • 1.25 cups water
  • 1 large egg
  • 3 tbsp neutral oil
  • 1 tsp vanilla extract

Instructions:

  1. In a large mixing bowl, whisk together the all-purpose flour, baking powder, granulated sugar, and salt to aerate the dry base and ensure even distribution of the leavening agent.
  2. Create a well in the center of the dry ingredients and pour in the water, egg, oil, and vanilla extract.
  3. Whisk gently just until the large streaks of flour disappear, being careful not to overmix; small lumps should remain for a tender crumb.
  4. Heat a non-stick skillet or griddle over medium heat and lightly grease with a small amount of oil.
  5. Pour 1/4 cup of batter per pancake onto the hot surface. Cook until bubbles form on the surface and the edges appear matte and set.
  6. Flip the pancakes once and cook for an additional 1–2 minutes until the underside is golden brown and the center is fully cooked.
