Ingredients:
- 2 cups tapioca flour (240g)
- 1 cup whole milk (240ml)
- ½ cup vegetable oil (120ml)
- 1 teaspoon salt (5g)
- 1 large egg
- 1 cup grated cheese (Parmesan or mozzarella) (100g)
Instructions:
- Preheat your oven to 375°F (190°C).
- Combine milk, oil, and salt in a saucepan. Heat over medium until just boiling.
- Pour the boiling mixture into a mixing bowl with the tapioca flour. Stir until well combined.
- Allow to cool for a few minutes.
- Add the egg and whisk until the dough is smooth.
- Fold in the grated cheese until evenly distributed.
- Scoop tablespoon-sized amounts of dough onto a baking sheet lined with parchment paper, spacing them 2 inches apart.
- Bake for 15-20 minutes until the tops are golden brown and puffed.
