Ingredients:

  • 2 cups tapioca flour (240g)
  • 1 cup whole milk (240ml)
  • ½ cup vegetable oil (120ml)
  • 1 teaspoon salt (5g)
  • 1 large egg
  • 1 cup grated cheese (Parmesan or mozzarella) (100g)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Combine milk, oil, and salt in a saucepan. Heat over medium until just boiling.
  3. Pour the boiling mixture into a mixing bowl with the tapioca flour. Stir until well combined.
  4. Allow to cool for a few minutes.
  5. Add the egg and whisk until the dough is smooth.
  6. Fold in the grated cheese until evenly distributed.
  7. Scoop tablespoon-sized amounts of dough onto a baking sheet lined with parchment paper, spacing them 2 inches apart.
  8. Bake for 15-20 minutes until the tops are golden brown and puffed.
