Ingredients:

  • 2 large ripe bananas, peeled (preferably frozen)
  • 1 cup Plain, Unsweetened Greek Yogurt (or Goat Yogurt)
  • ¼ cup Natural Peanut Butter (Xylitol-Free!)
  • 2–4 tablespoons Water or Unsweetened Coconut Milk (optional binder)
  • 1 tablespoon Shredded Carrots or Rolled Oats (optional garnish)

Instructions:

  1. Prep the Bananas: If using fresh bananas, break them into large chunks. If using frozen bananas, let them thaw slightly for 5 minutes before blending.
  2. Combine Ingredients: Place the banana chunks, Greek yogurt, and peanut butter into the blender or food processor jug.
  3. Initial Blend: Pulse 4–5 times to start breaking down the ingredients. Then, blend continuously until the mixture is completely smooth and uniform.
  4. Check Consistency: If the mixture is too thick to pour easily, add the optional water or coconut milk, 1 tablespoon at a time, blending briefly after each addition until it reaches a thick, pourable consistency (similar to a milkshake).
  5. Portion the Mixture: Carefully pour the mixture into your chosen silicone molds, ice cube trays, or small freezer-safe cups.
  6. Garnish (Optional): Lightly sprinkle the optional shredded carrots or rolled oats onto the surface of the mixture in the molds.
  7. Freeze Solid: Transfer the molds to the freezer and freeze for a minimum of 4–6 hours, or ideally overnight, until completely solid.
  8. Unmold and Serve: Pop the treats out of the molds. Let the portion sit at room temperature for 5–10 minutes to soften slightly before serving to prevent brain freeze.
