Ingredients:
- 2 large overripe bananas (200g)
- 1/2 cup creamy peanut butter (128g)
- 1 cup rolled oats (90g)
- 1 tsp vanilla extract (5ml)
- 1/4 tsp salt (1.5g)
- 1/3 cup dark chocolate chips (60g)
Instructions:
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone mat.
- In a large mixing bowl, mash the bananas until they reach a velvety consistency with no large lumps.
- Stir in the peanut butter and vanilla extract until the mixture is a smooth, mahogany-colored paste.
- Fold in the rolled oats and salt, stirring until the oats are fully hydrated and the batter is thick.
- Gently fold in the dark chocolate chips, ensuring they are evenly distributed.
- Scoop the mixture into 8 equal mounds on the baking sheet and press them slightly into disks.
- Bake for 12–15 minutes until the edges are set and the tops feel firm to the touch.
- Let the snacks cool for 5 minutes to allow the structure to set before serving.
