Ingredients:

  • 2 large overripe bananas (200g)
  • 1/2 cup creamy peanut butter (128g)
  • 1 cup rolled oats (90g)
  • 1 tsp vanilla extract (5ml)
  • 1/4 tsp salt (1.5g)
  • 1/3 cup dark chocolate chips (60g)

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone mat.
  2. In a large mixing bowl, mash the bananas until they reach a velvety consistency with no large lumps.
  3. Stir in the peanut butter and vanilla extract until the mixture is a smooth, mahogany-colored paste.
  4. Fold in the rolled oats and salt, stirring until the oats are fully hydrated and the batter is thick.
  5. Gently fold in the dark chocolate chips, ensuring they are evenly distributed.
  6. Scoop the mixture into 8 equal mounds on the baking sheet and press them slightly into disks.
  7. Bake for 12–15 minutes until the edges are set and the tops feel firm to the touch.
  8. Let the snacks cool for 5 minutes to allow the structure to set before serving.
