Ingredients:

  • 1 cup (240 ml) rolled oats (not instant)
  • ½ cup (120 ml) creamy peanut butter
  • ⅓ cup (80 ml) honey or maple syrup
  • ¼ cup (60 ml) ground flaxseed (optional)
  • 1 teaspoon (5 ml) vanilla extract
  • ¼ cup (60 ml) mini chocolate chips (optional)
  • 2 tablespoons (30 ml) chia seeds (optional)

Instructions:

  1. In a large mixing bowl, combine all ingredients: rolled oats, peanut butter, honey/maple syrup, ground flaxseed, vanilla extract, chocolate chips, and chia seeds (if using).
  2. Stir everything together until well combined. The mixture should be thick and slightly sticky.
  3. Cover the bowl and refrigerate for at least 30 minutes. This will help the mixture firm up and make it easier to roll.
  4. Once chilled, roll the mixture into 1-inch balls using your hands.
  5. Place the rolled balls on the prepared cookie sheet or plate.
  6. For even firmer balls, refrigerate for another 15-20 minutes (optional).
  7. Store in an airtight container in the refrigerator for up to a week. Enjoy your peanut butter and oats energy bites!
