Ingredients:

  • 1 cup (125g) old fashioned rolled oats
  • 1/2 cup (128g) creamy peanut butter
  • 1/3 cup (110g) honey
  • 1 tsp (5ml) vanilla extract
  • 1/4 tsp (1.5g) fine sea salt
  • 1/4 cup (30g) mini chocolate chips
  • 2 tbsp (15g) unsweetened shredded coconut

Instructions:

  1. Combine the rolled oats, peanut butter, honey, vanilla, and salt in a large mixing bowl. Stir with a spatula until the mixture is fully incorporated and looks like a thick, heavy paste.
  2. Gently fold in the chocolate chips and shredded coconut until evenly distributed.
  3. Scoop about 1 tablespoon of the mixture at a time and roll between your palms to form a ball roughly 1 inch in diameter.
  4. Place the balls on a parchment-lined baking sheet and refrigerate for at least 30 minutes until firm.
