Ingredients:

  • 1/2 cup (120 ml) full-fat Mayonnaise
  • 1/4 cup (60 ml) full-fat Sour Cream
  • 1/4 cup (60 ml) Buttermilk (approx.), for consistency adjustment
  • 4 oz (115 g) Blue Cheese (Stilton, Roquefort, or Gorgonzola), crumbled
  • 1 tsp (5 ml) Fresh Lemon Juice
  • 1/2 tsp (2.5 ml) White Wine Vinegar or Apple Cider Vinegar
  • 1/2 tsp (2.5 ml) Worcestershire Sauce
  • 1/2 tsp (2.5 ml) Garlic Powder
  • 1/4 tsp (1.25 g) Fine Sea Salt, to taste
  • 1/2 tsp (2.5 g) Freshly Ground Black Pepper
  • 1 Tbsp (15 ml) Fresh Chives, finely chopped (optional)

Instructions:

  1. Prepare the Blue Cheese: Gently crumble the blue cheese. Set aside approximately one-quarter of the crumbs. This reserved portion will be folded in at the end for larger chunks and textural contrast.
  2. Combine the Primary Base: In a mixing bowl, combine the mayonnaise and sour cream. Whisk vigorously until the mixture is smooth and completely homogenous.
  3. Add Flavour and Acid: Introduce the lemon juice, white wine/cider vinegar, Worcestershire sauce, garlic powder, salt, and freshly ground black pepper to the creamy base. Whisk well to ensure all components are thoroughly incorporated.
  4. Incorporate the Main Cheese: Add the larger portion (three-quarters) of the blue cheese crumbs. Use a rubber spatula to fold the cheese into the base. Avoid over-whisking at this stage; we want cheese chunks to remain visible.
  5. Adjust Consistency with Buttermilk: Gradually stream in the buttermilk, starting with 60 ml (1/4 cup). Whisk slowly until the mixture reaches your desired texture. Use less buttermilk for a thick dip or more for a pourable dressing.
  6. Chill (Crucial Step): Transfer the blue cheese mixture to an airtight container. Refrigerate for a minimum of 30 minutes, ideally 1 hour. This allows the liquid components to absorb the blue cheese flavor, deepening the profile considerably.
  7. Final Touches and Serve: Just before serving, remove the dip from the fridge. Taste and adjust seasoning if necessary. Fold in the reserved blue cheese chunks and the chopped chives for visual appeal and textural contrast.
