Ingredients:

  • 3 medium overripe bananas, mashed (approx. 1 cup / 240ml)
  • 1/2 cup (120g) canned pumpkin puree
  • 1/2 cup (120ml) vegetable oil
  • 3/4 cup (150g) light brown sugar, packed
  • 2 large eggs, room temperature
  • 1 tsp (5ml) vanilla extract
  • 1 1/2 cups (190g) all-purpose flour
  • 1 tsp (5g) baking soda
  • 1/2 tsp (3g) salt
  • 1 tbsp (6g) ground cinnamon
  • 1 tsp (2g) ground nutmeg
  • 1/2 cup (85g) semi-sweet chocolate chips
  • 1/2 cup (60g) chopped walnuts

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan with butter or oil, or line it with parchment paper.
  2. In a large bowl, mash the bananas until mostly smooth.
  3. Whisk in the pumpkin puree, oil, brown sugar, eggs, and vanilla until the mixture is a uniform, glossy orange emulsion.
  4. Sift the flour, baking soda, salt, and spices directly into the wet mixture.
  5. Fold the ingredients together with a spatula just until no streaks of flour remain, taking care not to over-mix.
  6. Gently fold in the chocolate chips and chopped walnuts.
  7. Pour the batter into the prepared pan and smooth the top.
  8. Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean.
