Ingredients:
- 1.5 cups (190g) all-purpose flour
- 1 tsp (5g) baking soda
- 0.5 tsp (2g) salt
- 1 tbsp (6g) pumpkin pie spice
- 1 cup (245g) canned pumpkin purée
- 0.5 cup (115g) neutral oil
- 0.75 cup (150g) granulated sugar
- 2 large eggs
- 1 tsp (5ml) vanilla extract
- 1 cup (120g) fresh cranberries, halved
- 0.5 cup (60g) chopped pecans
- 1 cup (120g) powdered sugar
- 2 tbsp (30ml) fresh orange juice
- 0.5 tsp (2g) orange zest
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line the bottom with parchment paper. In a small bowl, toss halved cranberries in a pinch of flour until lightly coated.
- In a large bowl, whisk together pumpkin purée, oil, sugar, eggs, and vanilla until smooth and emulsified.
- Sift the flour, baking soda, salt, and pumpkin pie spice directly into the wet ingredients. Stir with a spatula just until no streaks of flour remain.
- Gently fold in the floured cranberries and pecans. Pour the batter into the prepared pan and smooth the top.
- Bake for 50–60 minutes, or until the edges pull slightly away from the pan and a toothpick inserted into the center comes out with only a few moist crumbs.
- Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
- Whisk powdered sugar, orange juice, and zest together, then drizzle the glaze over the cooled bread in a zig-zag pattern.
