Ingredients:

  • 1 pound ground beef (preferably lean)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 cans diced tomatoes (14.5 oz each)
  • 2 cups beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh basil leaves, chopped (for garnish)
  • Grated Parmesan cheese (for serving)

Instructions:

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and sauté until translucent (about 3-5 minutes).
  3. Stir in minced garlic and sauté for an additional minute until fragrant.
  4. Add ground beef to the pot and cook until browned, breaking it apart with a spoon (about 5-7 minutes). Drain excess fat if necessary.
  5. Stir in the diced tomatoes (with juices), beef broth, tomato paste, oregano, and basil. Season with salt and pepper to taste.
  6. Bring the mixture to a boil, then reduce heat to low. Let it simmer for 15 minutes to allow the flavors to meld.
  7. Taste the soup and adjust salt and pepper as needed.
  8. Ladle the soup into bowls and garnish with fresh basil and Parmesan cheese if desired. Enjoy!
