Ingredients:
- 1 pound ground beef (preferably lean)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 cans diced tomatoes (14.5 oz each)
- 2 cups beef broth
- 1 tablespoon tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 1 tablespoon olive oil
- Fresh basil leaves, chopped (for garnish)
- Grated Parmesan cheese (for serving)
Instructions:
- Heat olive oil in a large pot over medium heat.
- Add diced onion and sauté until translucent (about 3-5 minutes).
- Stir in minced garlic and sauté for an additional minute until fragrant.
- Add ground beef to the pot and cook until browned, breaking it apart with a spoon (about 5-7 minutes). Drain excess fat if necessary.
- Stir in the diced tomatoes (with juices), beef broth, tomato paste, oregano, and basil. Season with salt and pepper to taste.
- Bring the mixture to a boil, then reduce heat to low. Let it simmer for 15 minutes to allow the flavors to meld.
- Taste the soup and adjust salt and pepper as needed.
- Ladle the soup into bowls and garnish with fresh basil and Parmesan cheese if desired. Enjoy!
