Ingredients:

  • 1 pound (450 g) Roma sausage, casings removed
  • 1 tablespoon (15 mL) olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced (red or yellow)
  • 1 can (14.5 oz / 410 g) diced tomatoes, drained
  • 1 teaspoon (5 g) red pepper flakes
  • Salt and black pepper to taste
  • 1 teaspoon (5 g) Italian seasoning
  • Fresh basil, chopped (for garnish)
  • Grated Parmesan cheese (optional)

Instructions:

  1. Dice the onion, bell pepper, and garlic. Drain the diced tomatoes.
  2. Heat olive oil in a large skillet over medium heat. Add the Roma sausage; cook until browned, about 5-7 minutes.
  3. Add diced onion and bell pepper to the skillet. Sauté until softened, about 3-4 minutes. Stir in minced garlic; cook for an additional 1 minute.
  4. Add drained diced tomatoes, red pepper flakes, Italian seasoning, salt, and black pepper to the skillet. Stir to combine.
  5. Reduce heat to low; let the mixture simmer for 10 minutes, allowing flavors to meld.
  6. Taste and adjust seasoning as necessary. Garnish with fresh basil and sprinkle with Parmesan cheese if desired.
