Ingredients:
- 1/2 cup mayonnaise (115g)
- 1/2 cup plain Greek yogurt (120g)
- 3 tbsp dill relish (45g)
- 1 tbsp non pareil capers, drained and minced (15g)
- 1 tbsp fresh lemon juice (15ml)
- 1 small shallot, finely minced (15g)
- 1 tbsp fresh dill, finely chopped (3g)
- 1 tsp Dijon mustard (5g)
- 1/4 tsp Worcestershire sauce (1.25g)
- 1/8 tsp fine sea salt
- 1/8 tsp fresh cracked black pepper
Instructions:
- Finely chop the shallot and capers until they are almost a paste.
- Remove the tough stems from the fresh dill and chop until it looks like green confetti.
- In your glass bowl, whisk the 1/2 cup mayonnaise and 1/2 cup Greek yogurt until the mixture is completely smooth and streak free.
- Add the 1 tsp Dijon mustard, 1/4 tsp Worcestershire sauce, and 1 tbsp lemon juice.
- Fold in the 3 tbsp dill relish, minced shallots, and minced capers.
- Stir in the 1/8 tsp salt and 1/8 tsp black pepper.
- Gently fold in the chopped fresh dill until the sauce is speckled with green.
- Give it a final stir; it should be thick enough to hold a soft peak on a spoon.
- Dip a piece of bread or a vegetable to ensure the acid levels make your mouth water.
- Cover and refrigerate for at least 30 minutes until the flavors feel unified and the texture is firm.
