Ingredients:

  • 2 cups fresh strawberries, hulled and quartered
  • 2 cups fresh blueberries, rinsed and dried
  • 1 tbsp fresh lemon juice
  • 8 oz cream cheese, softened to room temperature
  • 1 cup powdered sugar
  • 1 tsp pure vanilla extract
  • 2 cups Cool Whip or stabilized whipped cream, thawed
  • 1 cup mini marshmallows

Instructions:

  1. Rinse strawberries and blueberries thoroughly and pat them completely dry with a paper towel. Toss the quartered strawberries with lemon juice in a small bowl.
  2. In a large mixing bowl, beat the softened cream cheese and powdered sugar together until the mixture is smooth and fluffy. Stir in the vanilla extract.
  3. Using a rubber spatula, gently fold in the Cool Whip one cup at a time using a 'cut and fold' motion to maintain aeration.
  4. Gently fold in the prepared strawberries, blueberries, and mini marshmallows. Stop mixing immediately once the fruit is distributed.
  5. Transfer the salad to a serving bowl and chill for at least one hour before serving.
