Ingredients:
- 2 cups fresh strawberries, hulled and quartered
- 2 cups fresh blueberries, rinsed and dried
- 1 tbsp fresh lemon juice
- 8 oz cream cheese, softened to room temperature
- 1 cup powdered sugar
- 1 tsp pure vanilla extract
- 2 cups Cool Whip or stabilized whipped cream, thawed
- 1 cup mini marshmallows
Instructions:
- Rinse strawberries and blueberries thoroughly and pat them completely dry with a paper towel. Toss the quartered strawberries with lemon juice in a small bowl.
- In a large mixing bowl, beat the softened cream cheese and powdered sugar together until the mixture is smooth and fluffy. Stir in the vanilla extract.
- Using a rubber spatula, gently fold in the Cool Whip one cup at a time using a 'cut and fold' motion to maintain aeration.
- Gently fold in the prepared strawberries, blueberries, and mini marshmallows. Stop mixing immediately once the fruit is distributed.
- Transfer the salad to a serving bowl and chill for at least one hour before serving.
