Ingredients:

  • 4 cups cubed seedless watermelon (approx. 600g)
  • 1 cup crumbled feta cheese (approx. 150g), preferably Greek
  • 1/4 cup fresh mint leaves, roughly chopped (approx. 10g)
  • 2 tablespoons extra virgin olive oil (30ml)
  • 1 tablespoon fresh lime juice (15ml)
  • Salt and freshly ground black pepper, to taste

Instructions:

  1. Cube the watermelon into bite-sized pieces and place in a large mixing bowl.
  2. Crumble the feta cheese and set aside.
  3. Roughly chop the fresh mint leaves.
  4. Add crumbled feta and chopped mint to the bowl with the watermelon.
  5. In a small bowl, whisk together olive oil and lime juice.
  6. Drizzle the dressing over the salad and gently toss to combine.
  7. Season with salt and pepper to taste, adding more lime juice if desired.
  8. Transfer the salad to a serving dish and enjoy immediately for the best freshness.
