Ingredients:
- 4 cups cubed seedless watermelon (approx. 600g)
- 1 cup crumbled feta cheese (approx. 150g), preferably Greek
- 1/4 cup fresh mint leaves, roughly chopped (approx. 10g)
- 2 tablespoons extra virgin olive oil (30ml)
- 1 tablespoon fresh lime juice (15ml)
- Salt and freshly ground black pepper, to taste
Instructions:
- Cube the watermelon into bite-sized pieces and place in a large mixing bowl.
- Crumble the feta cheese and set aside.
- Roughly chop the fresh mint leaves.
- Add crumbled feta and chopped mint to the bowl with the watermelon.
- In a small bowl, whisk together olive oil and lime juice.
- Drizzle the dressing over the salad and gently toss to combine.
- Season with salt and pepper to taste, adding more lime juice if desired.
- Transfer the salad to a serving dish and enjoy immediately for the best freshness.
