Ingredients:

  • 2 cups raw almonds (240g)
  • 1 tablespoon olive oil (15ml)
  • 3 tablespoons soy sauce (45ml)
  • 2 tablespoons sesame oil (30ml)
  • 1 tablespoon honey or agave syrup (15ml)
  • 1 teaspoon rice vinegar (5ml)
  • 1 teaspoon chili paste (optional, for spice) (5ml)
  • 1 teaspoon finely minced garlic (2g)
  • 1 teaspoon finely minced ginger (2g)
  • 1 tablespoon toasted sesame seeds (optional) (8g)
  • 1 tablespoon sliced green onions (optional) (5g)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Prepare a baking sheet by lining it with parchment paper (optional).
  3. In a mixing bowl, combine raw almonds and olive oil. Toss to coat evenly.
  4. Spread the oiled almonds in a single layer on the prepared baking sheet.
  5. Roast the almonds in the preheated oven for 15-20 minutes, stirring halfway through, until golden brown and fragrant.
  6. While the almonds roast, prepare the Savory Asian Sauce: In a small bowl, whisk together soy sauce, sesame oil, honey, rice vinegar, chili paste (if using), garlic, and ginger.
  7. Once the almonds are done roasting, remove them from the oven and let them cool slightly.
  8. Drizzle the Savory Asian Sauce over the warm almonds.
  9. Toss to coat the almonds evenly in the sauce.
  10. Optionally, garnish with toasted sesame seeds and sliced green onions.
  11. Serve warm or at room temperature.
