Ingredients:
- 2 cups raw almonds (240g)
- 1 tablespoon olive oil (15ml)
- 3 tablespoons soy sauce (45ml)
- 2 tablespoons sesame oil (30ml)
- 1 tablespoon honey or agave syrup (15ml)
- 1 teaspoon rice vinegar (5ml)
- 1 teaspoon chili paste (optional, for spice) (5ml)
- 1 teaspoon finely minced garlic (2g)
- 1 teaspoon finely minced ginger (2g)
- 1 tablespoon toasted sesame seeds (optional) (8g)
- 1 tablespoon sliced green onions (optional) (5g)
Instructions:
- Preheat the oven to 350°F (175°C).
- Prepare a baking sheet by lining it with parchment paper (optional).
- In a mixing bowl, combine raw almonds and olive oil. Toss to coat evenly.
- Spread the oiled almonds in a single layer on the prepared baking sheet.
- Roast the almonds in the preheated oven for 15-20 minutes, stirring halfway through, until golden brown and fragrant.
- While the almonds roast, prepare the Savory Asian Sauce: In a small bowl, whisk together soy sauce, sesame oil, honey, rice vinegar, chili paste (if using), garlic, and ginger.
- Once the almonds are done roasting, remove them from the oven and let them cool slightly.
- Drizzle the Savory Asian Sauce over the warm almonds.
- Toss to coat the almonds evenly in the sauce.
- Optionally, garnish with toasted sesame seeds and sliced green onions.
- Serve warm or at room temperature.
