Ingredients:
- 1.5 lbs Brussels sprouts, trimmed and halved
- 6 oz thick-cut bacon, roughly chopped
- 2 tablespoons olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons balsamic vinegar
- 1 tablespoon maple syrup (optional)
- Optional: red pepper flakes
Instructions:
- Preheat oven to 400°F (200°C).
- Trim and halve (or quarter) the Brussels sprouts.
- In a large bowl, toss the Brussels sprouts and chopped bacon with olive oil, salt, and pepper. Ensure everything is evenly coated.
- Spread the mixture in a single layer on a baking sheet. Roast for 20-25 minutes, or until the Brussels sprouts are tender and slightly browned, and the bacon is crispy. Flip halfway through for even cooking.
- While the Brussels sprouts are roasting, whisk together the balsamic vinegar and maple syrup (if using).
- Remove the baking sheet from the oven and drizzle with the balsamic glaze. Toss to coat.
- For extra caramelization, broil for the last 2-3 minutes, watching closely to prevent burning.
- Serve immediately, garnished with red pepper flakes (if using).
