Ingredients:

  • 1.5 lbs Brussels sprouts, trimmed and halved
  • 6 oz thick-cut bacon, roughly chopped
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon maple syrup (optional)
  • Optional: red pepper flakes

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Trim and halve (or quarter) the Brussels sprouts.
  3. In a large bowl, toss the Brussels sprouts and chopped bacon with olive oil, salt, and pepper. Ensure everything is evenly coated.
  4. Spread the mixture in a single layer on a baking sheet. Roast for 20-25 minutes, or until the Brussels sprouts are tender and slightly browned, and the bacon is crispy. Flip halfway through for even cooking.
  5. While the Brussels sprouts are roasting, whisk together the balsamic vinegar and maple syrup (if using).
  6. Remove the baking sheet from the oven and drizzle with the balsamic glaze. Toss to coat.
  7. For extra caramelization, broil for the last 2-3 minutes, watching closely to prevent burning.
  8. Serve immediately, garnished with red pepper flakes (if using).
