Ingredients:
- 1 pound (450g) Brussels sprouts, trimmed and halved lengthwise
- 6 ounces (170g) thick-cut bacon, cut into 1-inch pieces
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon balsamic vinegar
- 1 teaspoon maple syrup (optional)
- Pinch of red pepper flakes (optional)
Instructions:
- Preheat oven to 400°F (200°C).
- In a large bowl, toss Brussels sprouts with olive oil, salt, and pepper.
- Spread bacon pieces on a baking sheet. Roast for 5 minutes, or until bacon begins to render its fat.
- Add the Brussels sprouts to the baking sheet, spreading them around the bacon.
- Roast for 20 minutes, or until Brussels sprouts are tender and slightly caramelized, and bacon is crispy. Toss halfway through.
- Whisk together balsamic vinegar and maple syrup (if using) in a small bowl.
- Remove from oven. Drizzle with balsamic glaze (if using). Toss gently to coat. Serve immediately with red pepper flakes, if desired.
