Ingredients:

  • 1 pound (450g) Brussels sprouts, trimmed and halved lengthwise
  • 6 ounces (170g) thick-cut bacon, cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon maple syrup (optional)
  • Pinch of red pepper flakes (optional)

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss Brussels sprouts with olive oil, salt, and pepper.
  3. Spread bacon pieces on a baking sheet. Roast for 5 minutes, or until bacon begins to render its fat.
  4. Add the Brussels sprouts to the baking sheet, spreading them around the bacon.
  5. Roast for 20 minutes, or until Brussels sprouts are tender and slightly caramelized, and bacon is crispy. Toss halfway through.
  6. Whisk together balsamic vinegar and maple syrup (if using) in a small bowl.
  7. Remove from oven. Drizzle with balsamic glaze (if using). Toss gently to coat. Serve immediately with red pepper flakes, if desired.
