Ingredients:

  • 1 pound hot Italian sausage (links)
  • 2 tablespoons olive oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium onion, sliced
  • 2 cups cherry tomatoes, halved
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon red pepper flakes (optional)
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for serving)
  • Lemon wedges (optional, for serving)

Instructions:

  1. Preheat the oven to 425°F (220°C).
  2. Place the Italian sausage links on the baking sheet.
  3. In a mixing bowl, combine sliced bell peppers, onions, cherry tomatoes, and garlic.
  4. Drizzle olive oil over the vegetables. Season with oregano, basil, red pepper flakes, salt, and black pepper. Toss to coat evenly.
  5. Arrange the vegetable mixture around the sausages on the baking sheet.
  6. Roast in the preheated oven for 25-30 minutes until sausages are browned and cooked through and vegetables are tender.
  7. Remove from oven, sprinkle with fresh parsley, and serve with lemon wedges.
