Ingredients:
- 1 pound hot Italian sausage (links)
- 2 tablespoons olive oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 medium onion, sliced
- 2 cups cherry tomatoes, halved
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon red pepper flakes (optional)
- Salt and black pepper, to taste
- Fresh parsley, chopped (for serving)
- Lemon wedges (optional, for serving)
Instructions:
- Preheat the oven to 425°F (220°C).
- Place the Italian sausage links on the baking sheet.
- In a mixing bowl, combine sliced bell peppers, onions, cherry tomatoes, and garlic.
- Drizzle olive oil over the vegetables. Season with oregano, basil, red pepper flakes, salt, and black pepper. Toss to coat evenly.
- Arrange the vegetable mixture around the sausages on the baking sheet.
- Roast in the preheated oven for 25-30 minutes until sausages are browned and cooked through and vegetables are tender.
- Remove from oven, sprinkle with fresh parsley, and serve with lemon wedges.
