Ingredients:
- 1 pound fresh broccoli rabe, trimmed and rinsed
- 4 cloves garlic, thinly sliced
- 2 tablespoons olive oil
- ½ teaspoon red pepper flakes
- Juice of 1 lemon
- Salt and freshly ground black pepper, to taste
- Grated Parmesan cheese, for serving (optional)
Instructions:
- Trim the ends and rinse the broccoli rabe thoroughly to remove any grit. Cut larger stems into halves for even cooking.
- Boil a large pot of salted water. Add broccoli rabe and cook for 2-3 minutes until bright green. Immediately transfer to a bowl of ice water for 1 minute, then drain.
- In a large skillet, heat olive oil over medium heat. Add sliced garlic and cook until fragrant, about 1-2 minutes.
- Add the blanched (or raw) broccoli rabe to the skillet. Sprinkle with red pepper flakes, salt, and pepper. Sauté for 5-7 minutes until tender.
- Squeeze the lemon juice over the sautéed broccoli rabe. Toss to combine and adjust seasoning if necessary.
- Transfer to a serving dish and optionally sprinkle with grated Parmesan cheese.
