Ingredients:

  • 1 lb ground turkey (85% lean)
  • 1 lb baby potatoes, halved or quartered
  • 1 medium onion, diced (about 1 cup)
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • ½ teaspoon dried thyme
  • ¼ teaspoon black pepper
  • ½ teaspoon salt
  • 1 cup chicken broth
  • 1 tablespoon fresh parsley, chopped (optional for garnish)

Instructions:

  1. Wash and halve the baby potatoes. Dice the onion and mince the garlic.
  2. Heat olive oil in the skillet over medium heat. Add the potatoes, season with salt and pepper, and sauté for 5-7 minutes until they begin to soften.
  3. Add the diced onion and minced garlic to the skillet; cook for an additional 2-3 minutes until onions are translucent.
  4. Push the vegetables to the side and add ground turkey to the skillet. Cook, breaking it apart with a spoon, until browned (about 5 minutes).
  5. Stir in paprika, thyme, and chicken broth. Bring to a boil, then reduce heat to a simmer. Cover and cook for an additional 10 minutes, or until potatoes are tender.
  6. Taste and adjust seasoning if needed. Serve hot, garnished with fresh parsley if desired.
