Ingredients:
- 1 lb ground turkey (85% lean)
- 1 lb baby potatoes, halved or quartered
- 1 medium onion, diced (about 1 cup)
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon paprika
- ½ teaspoon dried thyme
- ¼ teaspoon black pepper
- ½ teaspoon salt
- 1 cup chicken broth
- 1 tablespoon fresh parsley, chopped (optional for garnish)
Instructions:
- Wash and halve the baby potatoes. Dice the onion and mince the garlic.
- Heat olive oil in the skillet over medium heat. Add the potatoes, season with salt and pepper, and sauté for 5-7 minutes until they begin to soften.
- Add the diced onion and minced garlic to the skillet; cook for an additional 2-3 minutes until onions are translucent.
- Push the vegetables to the side and add ground turkey to the skillet. Cook, breaking it apart with a spoon, until browned (about 5 minutes).
- Stir in paprika, thyme, and chicken broth. Bring to a boil, then reduce heat to a simmer. Cover and cook for an additional 10 minutes, or until potatoes are tender.
- Taste and adjust seasoning if needed. Serve hot, garnished with fresh parsley if desired.
