Ingredients:

  • 1 tablespoon (15 mL) vegetable oil
  • 3 cloves garlic, minced
  • 1 tablespoon (15 g) coarsely ground black pepper
  • 1 tablespoon (15 g) brown sugar
  • 3 tablespoons (45 mL) soy sauce
  • 1 tablespoon (15 mL) oyster sauce (optional)
  • 1 tablespoon (15 mL) rice vinegar
  • ½ cup (120 mL) chicken or vegetable broth
  • 1 teaspoon (5 g) cornstarch mixed with 1 tablespoon (15 mL) water (optional)

Instructions:

  1. In a medium saucepan, heat vegetable oil over medium heat.
  2. Add minced garlic and sauté until fragrant (about 30 seconds), being careful not to burn.
  3. Stir in coarsely ground black pepper and brown sugar, cooking for 1 minute.
  4. Add soy sauce, oyster sauce (if using), and rice vinegar, stirring to combine.
  5. Gradually add chicken or vegetable broth, continuing to stir.
  6. If a thicker sauce is desired, whisk in the cornstarch mixture and cook for an additional 1-2 minutes until slightly thickened.
  7. Taste and adjust seasoning with additional black pepper or soy sauce as needed.
  8. Remove from heat and transfer to a serving dish or use immediately.
