Ingredients:
- 1 (12 oz) bologna chub, sliced (340 g)
- 1 tablespoon olive oil (15 ml)
- 1 medium onion, diced
- 1 bell pepper (any color), diced
- 2 cloves garlic, minced
- 1 cup frozen mixed vegetables (peas, carrots, corn) (150 g)
- ½ teaspoon smoked paprika
- ½ teaspoon black pepper
- 1 cup shredded cheddar cheese (100 g)
- Fresh parsley, chopped (for serving)
Instructions:
- Heat olive oil in a large skillet over medium heat.
- Sauté diced onion until translucent, about 3-4 minutes.
- Add bell pepper and garlic; cook for another 2 minutes until fragrant.
- Stir in sliced bologna chub and cook until slightly browned, around 5 minutes.
- Add frozen mixed vegetables, smoked paprika, and black pepper. Mix well and cook for another 3-5 minutes.
- Sprinkle shredded cheddar cheese evenly over the top. Cover and let it melt, about 2-3 minutes.
- Remove from heat and garnish with fresh parsley before serving.
