Ingredients:

  • 1 (12 oz) bologna chub, sliced (340 g)
  • 1 tablespoon olive oil (15 ml)
  • 1 medium onion, diced
  • 1 bell pepper (any color), diced
  • 2 cloves garlic, minced
  • 1 cup frozen mixed vegetables (peas, carrots, corn) (150 g)
  • ½ teaspoon smoked paprika
  • ½ teaspoon black pepper
  • 1 cup shredded cheddar cheese (100 g)
  • Fresh parsley, chopped (for serving)

Instructions:

  1. Heat olive oil in a large skillet over medium heat.
  2. Sauté diced onion until translucent, about 3-4 minutes.
  3. Add bell pepper and garlic; cook for another 2 minutes until fragrant.
  4. Stir in sliced bologna chub and cook until slightly browned, around 5 minutes.
  5. Add frozen mixed vegetables, smoked paprika, and black pepper. Mix well and cook for another 3-5 minutes.
  6. Sprinkle shredded cheddar cheese evenly over the top. Cover and let it melt, about 2-3 minutes.
  7. Remove from heat and garnish with fresh parsley before serving.
