Ingredients:
- 1 cup (160g) yellow cornmeal
- 1 cup (125g) all-purpose flour
- 1 tablespoon (12g) granulated sugar
- 1 tablespoon (12g) baking powder
- 1/2 teaspoon (3g) baking soda
- 1 teaspoon (6g) salt
- 1 cup (240ml) buttermilk, room temperature
- 1/2 cup (115g) unsalted butter, melted and slightly cooled
- 2 large eggs, room temperature
- 1 cup (115g) sharp cheddar cheese, shredded
- 1/4 cup (15g) scallions, finely chopped
- 4 oz (113g) diced mild green chiles
Instructions:
- Preheat your oven to 400°F (200°C) and generously grease a 12-cup muffin tin with butter or non-stick spray.
- In a large mixing bowl, whisk together the cornmeal, flour, sugar, baking powder, baking soda, and salt until no clumps remain.
- In a medium bowl, whisk together the eggs, buttermilk, and melted butter until smooth.
- Pour the wet ingredients into the dry ingredients and gently fold with a rubber spatula until flour streaks disappear; do not overmix.
- Fold in the shredded cheddar cheese, chopped scallions, and diced green chiles.
- Divide the batter evenly among the 12 muffin cups, filling each about 3/4 full.
- Bake for 18–22 minutes until the edges are deep golden brown and a toothpick inserted into the center comes out clean.
- Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack.
