Ingredients:
- 4 ears of fresh corn, husked and cleaned
- Olive oil or melted butter, for brushing
- ½ cup mayonnaise
- ½ cup Greek yogurt or sour cream
- 1 cup crumbled cotija cheese
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- 1 lime, juiced
- Fresh cilantro, chopped, for garnish
- Salt and pepper to taste
Instructions:
- Preheat the grill to medium-high heat (around 400°F or 200°C).
- Brush each ear of corn with olive oil or melted butter. Season with salt and pepper.
- Grill the corn, turning occasionally, until it’s charred and tender (about 10-15 minutes).
- In a large mixing bowl, combine mayonnaise, Greek yogurt, lime juice, chili powder, smoked paprika, and a pinch of salt and pepper.
- Once grilled, remove the corn and let cool slightly before coating.
- Generously spread the mayonnaise mixture over each ear of corn.
- Sprinkle with crumbled cotija cheese and garnish with fresh cilantro.
- Serve immediately, with extra lime wedges on the side.
