Ingredients:

  • 4 ears of fresh corn, husked and cleaned
  • Olive oil or melted butter, for brushing
  • ½ cup mayonnaise
  • ½ cup Greek yogurt or sour cream
  • 1 cup crumbled cotija cheese
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 lime, juiced
  • Fresh cilantro, chopped, for garnish
  • Salt and pepper to taste

Instructions:

  1. Preheat the grill to medium-high heat (around 400°F or 200°C).
  2. Brush each ear of corn with olive oil or melted butter. Season with salt and pepper.
  3. Grill the corn, turning occasionally, until it’s charred and tender (about 10-15 minutes).
  4. In a large mixing bowl, combine mayonnaise, Greek yogurt, lime juice, chili powder, smoked paprika, and a pinch of salt and pepper.
  5. Once grilled, remove the corn and let cool slightly before coating.
  6. Generously spread the mayonnaise mixture over each ear of corn.
  7. Sprinkle with crumbled cotija cheese and garnish with fresh cilantro.
  8. Serve immediately, with extra lime wedges on the side.
