Ingredients:

  • 8 fresh sardines, cleaned and gutted (approx. 1 lb / 450 g)
  • 3 tablespoons olive oil (45 ml)
  • 1 lemon, juiced and zested
  • 3 cloves garlic, minced
  • 1 teaspoon salt (5 g)
  • ½ teaspoon black pepper (2 g)
  • ¼ cup fresh parsley, chopped (15 g)
  • Lemon wedges for serving

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the sardines: Rinse under cold water and pat dry. Lay on a baking tray lined with parchment paper.
  3. Make the marinade: In a mixing bowl, combine olive oil, lemon juice, lemon zest, minced garlic, salt, and pepper.
  4. Marinate the sardines: Pour marinade over the sardines and ensure they are well-coated. Allow to sit for 10 minutes.
  5. Bake the sardines: Place the baking tray in the oven and bake for 15-20 minutes, until cooked through and skin is slightly crispy.
  6. Garnish and serve: Remove from the oven, sprinkle with fresh parsley, and serve with lemon wedges.
