Ingredients:
- 1 medium green cabbage (about 1 kg / 2 lbs)
- 3 tablespoons (45 ml) extra virgin olive oil
- 4 cloves garlic, minced
- ½ teaspoon (2.5 g) salt
- ¼ teaspoon (1 g) black pepper
- ½ cup (50 g) grated Parmesan cheese
- 1 tablespoon (15 ml) balsamic vinegar (optional)
Instructions:
- Preheat the oven to 425°F (220°C).
- Remove any wilted outer leaves from the cabbage.
- Slice the cabbage into 8 wedges, keeping the core intact.
- In a small bowl, combine olive oil, minced garlic, salt, pepper, and balsamic vinegar (if using).
- Place the cabbage wedges on a baking sheet lined with parchment paper.
- Brush each wedge generously with the garlic oil mixture.
- Sprinkle grated Parmesan over the top of the wedges.
- Roast in the preheated oven for 25-30 minutes until edges are crispy and the internal cabbage is tender, flipping halfway through.
- Serve warm, drizzled with additional olive oil if desired.
