Ingredients:

  • 1 medium green cabbage (about 1 kg / 2 lbs)
  • 3 tablespoons (45 ml) extra virgin olive oil
  • 4 cloves garlic, minced
  • ½ teaspoon (2.5 g) salt
  • ¼ teaspoon (1 g) black pepper
  • ½ cup (50 g) grated Parmesan cheese
  • 1 tablespoon (15 ml) balsamic vinegar (optional)

Instructions:

  1. Preheat the oven to 425°F (220°C).
  2. Remove any wilted outer leaves from the cabbage.
  3. Slice the cabbage into 8 wedges, keeping the core intact.
  4. In a small bowl, combine olive oil, minced garlic, salt, pepper, and balsamic vinegar (if using).
  5. Place the cabbage wedges on a baking sheet lined with parchment paper.
  6. Brush each wedge generously with the garlic oil mixture.
  7. Sprinkle grated Parmesan over the top of the wedges.
  8. Roast in the preheated oven for 25-30 minutes until edges are crispy and the internal cabbage is tender, flipping halfway through.
  9. Serve warm, drizzled with additional olive oil if desired.
