Ingredients:
- 1 cup long-grain white rice
- 2 cups chicken broth
- 2 tablespoons vegetable oil
- 1 medium onion, finely chopped
- 1 bell pepper, finely chopped
- 2 celery stalks, finely chopped
- 2-3 cloves garlic, minced
- 1 pound ground beef or pork
- 4 oz chicken liver, finely chopped (optional)
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
- 2 green onions, chopped (for garnish)
Instructions:
- Heat vegetable oil in a large skillet over medium heat.
- Add onion, bell pepper, and celery; cook until softened (about 5 minutes).
- Stir in garlic and cook for an additional minute until fragrant.
- Increase heat to medium-high; add ground meat and chicken liver (if using). Cook until browned, breaking apart the meat (about 5-7 minutes).
- Stir in Cajun seasoning, dried thyme, salt, and pepper. Combine well and cook for another 2 minutes.
- Add rice to the skillet, stirring to coat grains with the mixture. Pour in chicken broth and bring to a simmer.
- Cover and reduce heat to low; cook for 20 minutes or until rice is tender and liquid is absorbed. Fluff rice with a fork.
- Top with chopped green onions and serve hot.
