Ingredients:

  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 2 tablespoons vegetable oil
  • 1 medium onion, finely chopped
  • 1 bell pepper, finely chopped
  • 2 celery stalks, finely chopped
  • 2-3 cloves garlic, minced
  • 1 pound ground beef or pork
  • 4 oz chicken liver, finely chopped (optional)
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 green onions, chopped (for garnish)

Instructions:

  1. Heat vegetable oil in a large skillet over medium heat.
  2. Add onion, bell pepper, and celery; cook until softened (about 5 minutes).
  3. Stir in garlic and cook for an additional minute until fragrant.
  4. Increase heat to medium-high; add ground meat and chicken liver (if using). Cook until browned, breaking apart the meat (about 5-7 minutes).
  5. Stir in Cajun seasoning, dried thyme, salt, and pepper. Combine well and cook for another 2 minutes.
  6. Add rice to the skillet, stirring to coat grains with the mixture. Pour in chicken broth and bring to a simmer.
  7. Cover and reduce heat to low; cook for 20 minutes or until rice is tender and liquid is absorbed. Fluff rice with a fork.
  8. Top with chopped green onions and serve hot.
