Ingredients:
- 2 large eggs (100 g)
- 1 cup buttermilk (240 ml)
- 1 tablespoon hot sauce (15 ml)
- 1 cup all-purpose flour (120 g)
- 1 cup cornmeal (120 g)
- 1 teaspoon garlic powder (5 g)
- 1 teaspoon onion powder (5 g)
- 1 teaspoon smoked paprika (5 g)
- 1 teaspoon cayenne pepper (5 g)
- 1 teaspoon salt (5 g)
- ½ teaspoon black pepper (2 g)
- 4 fillets of white fish (such as catfish or cod), about 6 ounces each (170 g)
- Vegetable oil (approximately 2 cups or 480 ml)
Instructions:
- In a large bowl, whisk together eggs, buttermilk, and hot sauce.
- Submerge fish fillets in the marinade. Cover and refrigerate for 30 minutes.
- In a shallow dish, mix flour, cornmeal, garlic powder, onion powder, smoked paprika, cayenne, salt, and black pepper.
- In a frying pan or deep fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).
- Remove fish from marinade, allowing excess to drip off, then dredge in the seasoned flour mixture.
- Carefully place coated fish into hot oil and fry until golden brown and cooked through (about 3-5 minutes per side).
- Remove fish from oil and place on paper towels to drain excess oil. Serve hot, optionally garnished with lemon wedges or parsley.
