Ingredients:

  • 2 large eggs (100 g)
  • 1 cup buttermilk (240 ml)
  • 1 tablespoon hot sauce (15 ml)
  • 1 cup all-purpose flour (120 g)
  • 1 cup cornmeal (120 g)
  • 1 teaspoon garlic powder (5 g)
  • 1 teaspoon onion powder (5 g)
  • 1 teaspoon smoked paprika (5 g)
  • 1 teaspoon cayenne pepper (5 g)
  • 1 teaspoon salt (5 g)
  • ½ teaspoon black pepper (2 g)
  • 4 fillets of white fish (such as catfish or cod), about 6 ounces each (170 g)
  • Vegetable oil (approximately 2 cups or 480 ml)

Instructions:

  1. In a large bowl, whisk together eggs, buttermilk, and hot sauce.
  2. Submerge fish fillets in the marinade. Cover and refrigerate for 30 minutes.
  3. In a shallow dish, mix flour, cornmeal, garlic powder, onion powder, smoked paprika, cayenne, salt, and black pepper.
  4. In a frying pan or deep fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).
  5. Remove fish from marinade, allowing excess to drip off, then dredge in the seasoned flour mixture.
  6. Carefully place coated fish into hot oil and fry until golden brown and cooked through (about 3-5 minutes per side).
  7. Remove fish from oil and place on paper towels to drain excess oil. Serve hot, optionally garnished with lemon wedges or parsley.
