Ingredients:

  • 2 ripe avocados (about 300 grams total), peeled and pitted
  • 1/2 cup (90 grams) high-quality dark chocolate (70% cocoa or higher), chopped
  • 1/4 cup (60 ml) maple syrup or honey
  • 1 teaspoon vanilla extract
  • A pinch of sea salt
  • Cocoa powder (for garnish, optional)
  • Fresh mint leaves (for garnish, optional)
  • Berries (e.g., raspberries or strawberries, for garnish, optional)

Instructions:

  1. Place chopped dark chocolate in a microwave-safe bowl. Microwave in 30-second intervals until fully melted; stir between each interval.
  2. In a blender or food processor, add the ripe avocados, melted chocolate, maple syrup (or honey), vanilla extract, and salt. Blend until smooth and creamy, scraping down the sides as needed.
  3. Taste the mousse and adjust sweetness if needed by adding more sweetener.
  4. Transfer the mousse to serving dishes and chill in the refrigerator for at least 30 minutes to firm up.
  5. Before serving, dust with cocoa powder and top with fresh mint leaves or berries if desired.
