Ingredients:
- 1 pound (450g) fresh strawberries, hulled and halved or quartered
- 1/2 cup (100g) granulated sugar
- 2 tablespoons (30ml) lemon juice, freshly squeezed
- 1/4 cup (60ml) water
- 1/2 teaspoon vanilla extract (optional)
Instructions:
- In the saucepan, combine the strawberries, sugar, lemon juice, and water.
- Place the saucepan over medium heat and bring the mixture to a gentle simmer, stirring occasionally.
- Reduce the heat to low and continue to simmer, stirring occasionally, for about 15-20 minutes, or until the strawberries have softened and the compote has thickened slightly.
- Stir in the vanilla extract (if using) during the last minute of cooking.
- Remove the saucepan from the heat and let the compote cool completely before transferring it to a jar or airtight container. Compote will thicken further as it cools.
