Ingredients:

  • 1 pound (450g) fresh strawberries, hulled and halved or quartered
  • 1/2 cup (100g) granulated sugar
  • 2 tablespoons (30ml) lemon juice, freshly squeezed
  • 1/4 cup (60ml) water
  • 1/2 teaspoon vanilla extract (optional)

Instructions:

  1. In the saucepan, combine the strawberries, sugar, lemon juice, and water.
  2. Place the saucepan over medium heat and bring the mixture to a gentle simmer, stirring occasionally.
  3. Reduce the heat to low and continue to simmer, stirring occasionally, for about 15-20 minutes, or until the strawberries have softened and the compote has thickened slightly.
  4. Stir in the vanilla extract (if using) during the last minute of cooking.
  5. Remove the saucepan from the heat and let the compote cool completely before transferring it to a jar or airtight container. Compote will thicken further as it cools.
