Ingredients:
- 1 pound (450g) ground beef (80/20 preferred for optimal juiciness)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 cup (150g) corn (fresh, frozen, or canned)
- 1 teaspoon chili powder
- 1 teaspoon cumin
- ½ teaspoon smoked paprika
- Salt and pepper to taste
- 1 tablespoon olive oil
- ¾ cup (180ml) sour cream
- ¼ cup (60ml) mayonnaise
- 1 tablespoon lime juice
- 1 teaspoon hot sauce (optional)
- 1 cup (100g) shredded cheddar cheese
- ¼ cup (60g) sliced green onions
- Fresh cilantro, chopped (for garnish)
Instructions:
- Dice the onion and red bell pepper, mince the garlic, and measure out the spices.
- Heat olive oil in a large skillet over medium-high heat.
- Add diced onions; sauté until they begin to soften (about 3 minutes).
- Add garlic and red bell pepper; cook for an additional 2 minutes.
- Add ground beef, breaking it apart as it cooks, until browned (about 6-8 minutes).
- Sprinkle with chili powder, cumin, smoked paprika, salt, and pepper.
- Stir in corn and continue to cook for another 2-3 minutes.
- In a separate bowl, combine sour cream, mayonnaise, lime juice, and hot sauce. Mix until smooth.
- Remove the skillet from heat and stir in the sauce until well combined.
- Top with shredded cheddar cheese and green onions.
- Serve warm with a spoon to enjoy this loaded delight.
