Ingredients:

  • 1 pound (450g) ground beef (80/20 preferred for optimal juiciness)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup (150g) corn (fresh, frozen, or canned)
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • ¾ cup (180ml) sour cream
  • ¼ cup (60ml) mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon hot sauce (optional)
  • 1 cup (100g) shredded cheddar cheese
  • ¼ cup (60g) sliced green onions
  • Fresh cilantro, chopped (for garnish)

Instructions:

  1. Dice the onion and red bell pepper, mince the garlic, and measure out the spices.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add diced onions; sauté until they begin to soften (about 3 minutes).
  4. Add garlic and red bell pepper; cook for an additional 2 minutes.
  5. Add ground beef, breaking it apart as it cooks, until browned (about 6-8 minutes).
  6. Sprinkle with chili powder, cumin, smoked paprika, salt, and pepper.
  7. Stir in corn and continue to cook for another 2-3 minutes.
  8. In a separate bowl, combine sour cream, mayonnaise, lime juice, and hot sauce. Mix until smooth.
  9. Remove the skillet from heat and stir in the sauce until well combined.
  10. Top with shredded cheddar cheese and green onions.
  11. Serve warm with a spoon to enjoy this loaded delight.
