Ingredients:
- 1/4 cup olive oil
- 1/4 cup freshly squeezed lime juice
- 4 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder
- 1 teaspoon brown sugar
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon crushed red pepper flakes (optional)
- 1.5 lbs skirt steak, trimmed
Instructions:
- Combine olive oil, lime juice, minced garlic, cumin, smoked paprika, chili powder, brown sugar, sea salt, black pepper, and red pepper flakes in a mixing bowl.
- Whisk until well blended.
- Place the skirt steak in a resealable plastic bag or shallow dish. Pour the marinade over the steak, ensuring it is well coated.
- Seal the bag (or cover the dish) and refrigerate for 1 hour.
- Preheat your grill or stovetop pan over medium-high heat.
- Remove steak from marinade, allowing excess to drip off.
- Place the steak on the grill/pan and cook for about 4-5 minutes on each side for medium-rare (135°F / 57°C), depending on thickness.
- Remove steak from the grill and let it rest for 5 minutes.
- Slice against the grain into thin strips.
