Ingredients:

  • 1/4 cup olive oil
  • 1/4 cup freshly squeezed lime juice
  • 4 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon brown sugar
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1.5 lbs skirt steak, trimmed

Instructions:

  1. Combine olive oil, lime juice, minced garlic, cumin, smoked paprika, chili powder, brown sugar, sea salt, black pepper, and red pepper flakes in a mixing bowl.
  2. Whisk until well blended.
  3. Place the skirt steak in a resealable plastic bag or shallow dish. Pour the marinade over the steak, ensuring it is well coated.
  4. Seal the bag (or cover the dish) and refrigerate for 1 hour.
  5. Preheat your grill or stovetop pan over medium-high heat.
  6. Remove steak from marinade, allowing excess to drip off.
  7. Place the steak on the grill/pan and cook for about 4-5 minutes on each side for medium-rare (135°F / 57°C), depending on thickness.
  8. Remove steak from the grill and let it rest for 5 minutes.
  9. Slice against the grain into thin strips.
