Ingredients:

  • 1 (2-pound) slab of Bologna (approx. 900g)
  • 2 tablespoons of olive oil (30ml)
  • 2 tablespoons of your favorite barbecue rub or seasoning (30g)
  • 6 slider buns (preferably brioche or soft white rolls)
  • 1 cup coleslaw mix (about 100g)
  • ¼ cup mayonnaise (60ml)
  • 2 tablespoons apple cider vinegar (30ml)
  • 1 cup barbecue sauce (250ml)

Instructions:

  1. Score the surface of the bologna in a diamond pattern. Rub with olive oil and then liberally apply the barbecue seasoning.
  2. Set the smoker or grill to 225°F (107°C) using your choice of wood chips (hickory or applewood are excellent choices).
  3. Place the bologna in the smoker. Smoke for approximately 2 hours, or until the internal temperature reaches 165°F (74°C).
  4. In a bowl, combine coleslaw mix, mayonnaise, apple cider vinegar, salt, and pepper to taste. Toss well and set aside.
  5. Once the bologna is finished smoking, remove it from the grill and let it rest for 10 minutes. Slice the bologna into thick slabs for the sliders.
  6. Layer bologna on each slider bun, add coleslaw, and drizzle with barbecue sauce.
  7. Enjoy the sliders while warm, or cover and serve later at room temperature.
