Ingredients:

  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon onion powder
  • ½ teaspoon cayenne pepper (optional)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon brown sugar
  • 3 pounds beef short ribs
  • 1 cup ketchup
  • ¼ cup apple cider vinegar
  • ¼ cup brown sugar
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon smoked paprika
  • ½ teaspoon black pepper

Instructions:

  1. Mix olive oil, garlic, smoked paprika, cumin, onion powder, cayenne pepper, salt, pepper, and brown sugar in a bowl.
  2. Rub marinade all over short ribs and place in a baking dish or resealable bag. Chill for at least 30 minutes or overnight.
  3. Preheat slow cooker or oven to low (around 250°F/120°C). Place the marinated ribs in the cooker and cook for 2-3 hours until tender.
  4. In a saucepan, combine ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, Dijon mustard, smoked paprika, and black pepper. Simmer on low heat for 15 minutes.
  5. Preheat grill over medium heat. Remove ribs from the slow cooker, brush with barbecue sauce, and grill for 5-10 minutes, turning occasionally until caramelized.
  6. Serve hot, with extra barbecue sauce on the side.
