Ingredients:
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon smoked paprika
- 1 teaspoon ground cumin
- 1 teaspoon onion powder
- ½ teaspoon cayenne pepper (optional)
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon brown sugar
- 3 pounds beef short ribs
- 1 cup ketchup
- ¼ cup apple cider vinegar
- ¼ cup brown sugar
- 2 tablespoons Worcestershire sauce
- 1 tablespoon Dijon mustard
- 1 teaspoon smoked paprika
- ½ teaspoon black pepper
Instructions:
- Mix olive oil, garlic, smoked paprika, cumin, onion powder, cayenne pepper, salt, pepper, and brown sugar in a bowl.
- Rub marinade all over short ribs and place in a baking dish or resealable bag. Chill for at least 30 minutes or overnight.
- Preheat slow cooker or oven to low (around 250°F/120°C). Place the marinated ribs in the cooker and cook for 2-3 hours until tender.
- In a saucepan, combine ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, Dijon mustard, smoked paprika, and black pepper. Simmer on low heat for 15 minutes.
- Preheat grill over medium heat. Remove ribs from the slow cooker, brush with barbecue sauce, and grill for 5-10 minutes, turning occasionally until caramelized.
- Serve hot, with extra barbecue sauce on the side.
