Ingredients:
- 2 tbsp (28g) unsalted butter
- 1 medium (150g) yellow onion, finely diced
- 1 medium (60g) carrot, finely diced
- 3 cloves (9g) garlic, minced
- 2 tbsp (32g) tomato paste
- 28 oz (794g) canned crushed tomatoes
- 2 cups (473ml) chicken broth
- 1 tsp (5g) dried oregano
- ½ tsp (3g) granulated sugar
- Salt to taste
- Black pepper to taste
- ½ cup (120g) full-fat sour cream, room temperature
- ¼ cup (10g) fresh basil leaves, chiffonade
- 1 tbsp (15ml) lemon juice
Instructions:
- Melt the butter over medium heat in a Dutch oven. Add the diced onion and carrot, cooking for 5-7 minutes until the onions are translucent and the carrots have softened.
- Stir in the minced garlic and tomato paste, cooking for another 2 minutes until the paste turns a deep brick red and smells nutty.
- Pour in the crushed tomatoes and broth. Stir in the dried oregano and sugar.
- Bring the mixture to a gentle simmer, then reduce the heat to low. Cover and let the flavors meld for 15-20 minutes.
- Use an immersion blender to process the soup until it reaches a completely smooth, velvety texture.
- Remove the pot from the heat entirely. In a small bowl, place the room-temperature sour cream. Slowly whisk in one ladle of the hot soup into the sour cream to temper it.
- Stir the tempered sour cream mixture back into the main pot. Fold in the fresh basil and lemon juice.
