Ingredients:

  • 2 cups (280g) raw, unsalted almonds
  • 2 tbsp (30ml) olive oil
  • 1 tbsp (12g) light brown sugar
  • 1 tsp (2g) smoked paprika
  • ½ tsp (1g) cayenne pepper
  • ½ tsp (3g) garlic powder
  • ½ tsp (3g) fine sea salt
  • ¼ tsp (0.5g) black pepper

Instructions:

  1. Preheat your oven to 325°F (160°C).
  2. In a large mixing bowl, whisk together the olive oil, brown sugar, and all spices until the mixture forms a thick, reddish paste.
  3. Pour in the raw almonds and toss thoroughly until every nut is coated in the glaze.
  4. Spread the almonds in a single layer on a parchment-lined baking sheet.
  5. Roast for 12–15 minutes, stirring once halfway through, until the nuts reach a deepening color and fragrant aroma.
  6. Immediately remove the pan from the oven and spread the almonds out further on the parchment paper to stop the cooking process.
  7. Let the almonds cool completely for about 20 minutes before transferring them to a container.
