Ingredients:
- 2 cups (280g) raw, unsalted almonds
- 2 tbsp (30ml) olive oil
- 1 tbsp (12g) light brown sugar
- 1 tsp (2g) smoked paprika
- ½ tsp (1g) cayenne pepper
- ½ tsp (3g) garlic powder
- ½ tsp (3g) fine sea salt
- ¼ tsp (0.5g) black pepper
Instructions:
- Preheat your oven to 325°F (160°C).
- In a large mixing bowl, whisk together the olive oil, brown sugar, and all spices until the mixture forms a thick, reddish paste.
- Pour in the raw almonds and toss thoroughly until every nut is coated in the glaze.
- Spread the almonds in a single layer on a parchment-lined baking sheet.
- Roast for 12–15 minutes, stirring once halfway through, until the nuts reach a deepening color and fragrant aroma.
- Immediately remove the pan from the oven and spread the almonds out further on the parchment paper to stop the cooking process.
- Let the almonds cool completely for about 20 minutes before transferring them to a container.
