Ingredients:

  • 1 cup mayonnaise (240 ml)
  • 2 tablespoons chipotle peppers in adobo sauce (30 g), minced
  • 1 tablespoon lime juice (15 ml), freshly squeezed
  • 1 teaspoon garlic powder (5 g)
  • 1/2 teaspoon smoked paprika (2 g), optional
  • Salt to taste

Instructions:

  1. In a mixing bowl, add mayonnaise, minced chipotle peppers along with adobo sauce, lime juice, garlic powder, and smoked paprika.
  2. Using a whisk or spatula, mix until all ingredients are well combined and creamy.
  3. Sample the mayo and add salt or more chipotle if desired, mixing well after each addition.
  4. For best flavor, let the chipotle mayo chill in the fridge for 30 minutes before serving.
  5. Transfer the mayo to an airtight container and store in the refrigerator for up to one week.
