Instructions:
- In a mixing bowl, add the mayonnaise and finely chopped chipotle peppers with some adobo sauce.
- Stir in fresh lime juice, garlic powder, and smoked paprika (if using).
- Whisk the mixture until all ingredients are fully combined and the mayonnaise is evenly colored.
- Taste the mayonnaise and add salt as needed or adjust the chipotle for desired spiciness.
- Transfer the mayonnaise to an airtight container and refrigerate for at least 30 minutes to allow flavors to meld.
